Stewed Apples with Roasted Pecans
Ingredients:
- 5 cups diced apple
- 1/4 cup pecan nuts
- 1/4 teaspoon vanilla extract
- 1 pinch sea salt
Place 1/4" of water in the botom of a pot. Add in the apples sea salt and vanilla extract and mix in together. Turn on the heat and bring water to a boil then place pot on a flame deflector and simmer over a very low heat with a lid on for 45 minutes. While apples are cooking preheat an oven to 350 F and roast the pecans on a baking tray for approximately 10 minutes. Check on the nuts every 3 minutes and turn them to prevent burning. Once they are roasted evenly remove from the oven and place them on a tray to cool. Chop them into slithers and sprinkle on top of the apple, then serve.
